Avocado Pine Nut Salad
This is a simple, nutritious salad with only four ingredients. Serve as a side dish or a main course.
1/2 cup pine nuts, toasted (see below)
1 head romaine lettuce, or 6 cups of your favorite greens
2 cups cooked brown rice, warm
Juice of 1/2 lemon
1-2 T olive oil
For the rice:
Cook according to package directions. Or, simmer 1 cup of rice in 2 cups of water for 45-50 minutes.
For the pine nuts:
Over medium-high heat, warm a pan and add the pine nuts. Shake the pan periodically and remove from the heat once the oils are released and the pine nuts start to turn golden brown.
To Assemble the Salad:
Chop the lettuce and place into a salad bowl.
Pit and cube the avocado and add to the bowl.
Douse the lettuce and avocado with lemon juice and olive oil and toss. Add the warm rice and toasted pine nuts. Toss and serve as a main course or as a side salad.
