Chocolate Silk Pie

12 ounces chocolate chips

12.3 - 16 ounces silken firm tofu (or 1 aseptic box)

1/3 cup sweetener (agave nectar, brown rice syrup, molasses or combination of all three)

1/2 tsp vanilla

Dash of salt

1 graham cracker pie crust (store bought is easiest)

Optional:
soy whipped “cream”

Methods/steps

If you have a double boiler, boil water, place chocolate chips in top sauce pan, and, stirring occasionally, melt the chocolate chips. If you don’t have a double boiler, boil 1-2 inches of water in a sauce pan. Place chocolate chips in a metal bowl or heat-proof glass bowl and place on top of the sauce pan. Stirring occasionally, melt the chocolate chips.

In a blender mix the tofu, sweetener, vanilla and dash of salt and the melted chocolate chips. Blend thoroughly. You may need to stop the blender and scrape down the sides a few times.

Pour the mixture into the pie crust and place the pie in the refrigerator for 1-2 hours. Serve on its own or with a dollop of soy whipped “cream.”
