Green Goodie Smoothie

This smoothie includes spirulina, an antioxidant-rich powder made from blue-green algae. It’s highly nutritious and doesn’t change the taste of this delicious fruit smoothie. It does, however, make it a beautiful green color.

Makes 4 1-cup servings

1 cup unsweetened pineapple juice

1 cup fortified vanilla soymilk or other non-dairy milk

1 fresh or frozen banana

10 frozen peach slices

1/4 cup fresh or frozen pitted cherries or raspberries

1 T spirulina powder

2 tsps maple syrup

Ice, as needed (to chill and thicken)


PER SERVING: 122 calories; 1.2 g fat; 0.2 g saturated fat; 9% calories from fat; 0 mg cholesterol;4.3 g protein; 24.9 g carbohydrate; 16.7 g sugar; 2.3 g fiber; 38 mg sodium; 95 mg calcium; 2.2mg iron; 46.6 mg vitamin C; 2366 mcg beta-carotene; 1.1 mg vitamin E

Methods/steps

Combine all of the ingredients in a blender and process until smooth. Stop the blender occasionally to scrape down the sides of the container and push any unblended fruit into the blades with a rubber spatula.

Green Goodie Smoothie is best served immediately. Leftovers may be stored in the refrigerator for up to 1 day or frozen for up to 1 week. Blend the mixture again before serving.
