Simple Brown Gravy

This gravy is low in fat and takes just minutes to prepare. Serve it with Mashed Grains and Cauliflower, Garlic Mashed Potatoes, and green beans for a wonderful, traditional meal.

Makes 1 1/2 cups

1 1/2 cups vegetable broth or water

2 T soy sauce or wheat-free tamari

2 T raw cashews

4 tsp whole wheat pastry or potato flour*

1 T onion powder

1/2 tsp garlic powder

1/2 tsp dried thyme

1/8 tsp ground black pepper


PER SERVING: 31 calories; 1.3 g fat; 0.2 g saturated fat; 37.7% calories from fat; 0 mg cholesterol; 1.1 g protein; 4.3 g carbohydrate; 0.7 g sugar; 0.4 g fiber; 307 mg sodium; 11 mg calcium; 0.4 mg iron; 0.4 mg vitamin C; 2 mcg beta-carotene; 0 mg vitamin E

Methods/steps
Combine all of the ingredients in a blender and process until completely smooth. Transfer to a saucepan and simmer, stirring constantly, until thickened.

Stored in a covered container in the refrigerator, leftover Simple Brown Gravy will keep for up to 2 days.
Additional Tips
*For gluten free gravy use potato flour in place of wheat flour and wheat-free tamari.
