Almond cookies are a delicious treat. Share with family over the holidays or enjoy as a dessert anytime.


Yields: Makes 18-24 cookies

Ingredients

1 cup whole wheat pastry flour

1 cup almonds

1 cup oats

pinch of salt

1/2 cup sweetener (maple syrup, brown rice syrup, agave nectar, barley malt)

1/2 cup oil

1/2 tsp vanilla

1/3 cup jam, all fruit or fruit juice sweetened

or

1/3 cup shaved dark chocolate


Preparation

Preheat the oven to 350 degrees.

Grind the almonds in a food processor until they are the consistency of corn meal. Place in a bowl.

Grind the oats in a food processor until it is the consistency of flour. Add to the bowl.

Add the flour and salt and mix.

Whisk the oil and sweetener together in a separate bowl. Add the vanilla.

Pour the liquid ingredients to the dry and mix thoroughly.

Roll a tablespoon or so of dough into a ball. Place on the cookie sheet and flatten. Make an indentation in the center of the cookie with your thumb. Put about 1/2 teaspoon of jam or chocolate shavings into the thumb print.

Bake for 10-15 minutes or until the edges of the cookies are golden brown. Remove from the oven and place on a cooling rack until cool.

Additional Tips

Store the cookies at room temperature in a covered container for a few days. Or freeze in freezer bags for several weeks.
