Get the kids to whip up these hearty buckwheat pancakes - with just a little help from a grown-up! Make "faces" out of fruit for a fun-filled breakfast.


Yields: Serves 2-3

Ingredients

1/2 cup buckwheat flour

1/2 cup whole wheat pastry flour

1 tsp baking powder

1/2 tsp salt

1 T flax meal

3 T warm water

3/4 cup non-dairy milk

1 T agave nectar, or other sweetener

2 T oil

1/2 tsp lemon juice

oil for the pan

fruit for decorating (strawberries, blueberries, oranges)

maple syrup


Preparation

Put all of the dry ingredients in a bowl and mix. Add the wet ingredients and mix with a whisk.

Warm a non-stick pan over medium heat and add a little oil. Pour 1/4 - 1/2 cup of batter into the pan. When bubbles have formed on top and around the edges and the underside is golden brown, flip and cook for another minute or two.

Decorate with blueberry "eyes," a strawberry "nose," and an orange "mouth." Top with maple syrup.
