Courgettes and Champignons
Courgettes and Champignons, or, as these vegetables are known in North America, Zucchini and Mushrooms, make a quick and easy side dish.
Yields: Serves 4-6
3 courgettes (zucchini)
8 oz champignons (mushrooms)
2 tsp basil
1 tsp oregano
2 T wheat-free tamari soy sauce
2 T olive oil
1/4 cup water
1/4 cup walnuts or pine nuts (optional)
Dice the onion. Slice the zucchinis and mushrooms into 1/4 inch slices.
Heat the oil in a pan over medium heat. Add the onion and cook until soft.
Add the zucchini and mushrooms, the tamari soy sauce, water and spices, and mix. Cover and cook until the zucchini and mushrooms are soft. Stir in the optional nuts.
Serve immediately to keep the texture of the courgettes.
