Hemp milk, made from THC-free hemp seed, is full of Omega-3's, protein, vitamins and minerals. Try it on your morning cereal or in your favorite cup of chai!


Yields: Makes 6 cups

Ingredients

6 cups water

1 T uncooked sweet brown rice or brown sushi rice

1 T uncooked oat groats or steel cut oats

4 T hulled hemp seed

1 drop soy lecithin, optional

salt to taste


Preparation

Soy Milk Maker Method:

Add the water to the designated line (approx. 6 cups) and then add the rice and and oats. Let it soak for 20-30 minutes.

When done soaking, add the hemp seed and the drop of soy lecithin, if using. Assemble the machine and, if your machine has a choice, choose the Rice setting. If not, choose the Soy setting.

When it's done strain and add salt to taste.

Stove-top method:

Soak the oats and rice in about 1 cup of the water for 20-30 minutes.

Add the hemp seed to the soaked oats and rice and transfer to a blender. Process until pureed.

Add the pureed mixture to a large stock pot with the rest of the water (5 cups) and the drop of soy lecithin, if using. Cover and bring to a boil (watch it because it may boil over). Lower the temperature and simmer for 12-15 minutes.

Strain and add salt to taste.

Additional Tips

If you prefer sweet or flavored hemp milk, try adding one or more of the following: (1-2 tsp should do it)

vanilla
agave nectar
brown rice syrup
turbinado sugar
cocoa powder
carob powder

Once the hemp milk cools store it in a ceramic or glass container in the fridge for 3-5 days.
