Try this refreshing beverage made from fresh lemons and lots of mint.
Yields: Makes 6 cups
Ingredients
6 lemons
1/2 - 3/4 cup agave nectar or brown rice syrup
1 cup mint leaves
6 cups water
ice
juicer
blender
Preparation
Cut the lemons in half and, using the juicer, squeeze all of the juice out of them. Pour the juice into the blender, add the sweetener, mint and 1 cup ice. Blend until the ice is crushed. Pour the liquid into a pitcher, add the 6 cups of water, stir and serve.
Additional Tips
If you can't find ripe lemons at your grocery store, buy frozen organic lemonade concentrate. Since most frozen lemonade comes pre-sweetened, just blend the concentrate and the mint with 1 cup of ice and 1 cup of water. Pour into a pitcher, add the rest of the water, stir and serve.
