This is a quick and easy recipe that has a striking barbecue-like flavor but only three ingredients. In a hurry for something tasty? Try this one!
Yields: Serves 4
8 oz tempeh
3 ripe tomatoes
2 T wheat-free tamari or soy sauce
1-2 T safflower oil
Slice the tempeh into bite size pieces. Dice the tomatoes. Warm the oil in a pan over medium-high heat. Brown the tempeh on both sides. Add the tomatoes and cook until there is little or no liquid left - 3-5 minutes. Add the tamari and siimmer for 2-3 minutes.
Serve with a steamed green vegetable, such as bok choy, Swiss chard or broccoli.
