Prepare these bars in advance for those mornings when breakfast is on the go. Or, have these omega-3 and fiber filled bars after school or on the hiking trail.


Yields: Makes 8-10 bars

Ingredients

2 2/3 cups old fashioned oats

1/3 cup flax seed meal

1/2 tsp sea salt

1/2 cup dried fruit (cranberries, raisins, apricots, dates)

2/3 cup nuts (pecans, walnuts, peanuts, almonds, sunflower seeds)

2 medium bananas, mashed

1/3 cup canola or safflower oil or 1/6 cup oil and 1/6 cup apple sauce

1 1/2 tsp cinnamon

2-3 T agave nectar, maple syrup or brown rice syrup.

Egg Replacer to equal one egg

1/2 cup hot water

Oil to spray the pan


Preparation

Preheat the oven to 350 degrees.

Chop the dried fruit and nuts into small pieces. Combine the oats, flax, nuts and fruit and mix well. Add the mashed bananas, Ener-G Egg Replacer, oil/applesauce, sweetener and hot water. Mix until blended and sticky. Let is sit for 10 minutes so that the oats absorb the liquid.

Spray a 7x11 or 9x9 inch glass baking dish. Press the dough into the pan.

Bake for 15-20 minutes, or until slightly golden brown and remove from the oven. Let the pan cool for 5-10 minutes and then cut the bars into squares. Remove from the pan and let them cool fully on a wire rack. The bars will be slightly chewy.

Additional Tips

For gluten-free, purchase "certified gluten-free oats."
