Savory Whole Grain Biscuits

Fill your house with the aroma of fresh savory biscuits! They can be made in 20 minutes and are inspired by author/actress Alicia Silverstone.


Yields: Makes 10 biscuits

Ingredients

2 cups whole wheat pastry flour

1 T baking powder

1/2 tsp fine sea salt

1/2 cup safflower oil

1/3 - 1 cup plain non-dairy milk (more or less as needed)


Preparation

Preheat oven to 450.


Combine flour, baking powder and salt in large bowl. Slowly pour in the oil, mixing with a fork until the mixture is combined. It will be quite crumbly. Add the milk a little at a time, stirring with a fork. Use just enough milk to bring the mixture together.

Gather the dough into a ball, and place on a lightly floured surface. Knead the dough about 25 times, then smooth the dough into a ball and pat it into a 1/2 inch round disk. Use a 2 1/2 inch biscuit cutter or the rim of a glass or jar to cut out the biscuits, gathering the scraps and re-rolling them to make a few additional biscuits. Place the biscuits on an ungreased baking sheet. If you like the sides crisper, place them about 1 inch apart. For softer sides, have the biscuits touching.

Bake on center rack for 10-12 minutes, or until the bottoms are golden. Serve hot or warm with your favorite plant based butter and/or jam.

Additional Tips

Make It Your Own!: Add walnuts to the batter for a little crunch and decadence. Add fresh herbs for a savory biscuit. Dip the bottoms of the biscuit in cornmeal for additional texture.
